Cheesy Shrimp n’ Grits – A Southern Recipe

Safe to say we’re all becoming mini chefs now with all this extra time at home, but personally I’m loving it! Everyday something fun, new and delicious to try. This past Sunday I decided to make a popular Southern dish called Shrimp and Grits, which happens to be one of my brunch menu favorites. It turned out super cheesy and bursting with flavor, so here’s the recipe and I hope you enjoy!

Ingredients (serves two):

  • 1/2 lb peeled, deveined shrimp
  • 1/2 cup grits
  • 1 cup sharp cheddar cheese
  • 2 ounces cream cheese
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 2 teaspoons cajun/creole seasoning
  • 1/4 teaspoon chili powder
  • season salt/pepper to taste
  • optional toppings – bacon and green onions

Instructions:

1. Boil chicken broth in a medium to large sauce pan

2. Add grits and reduce heat to low, cover and let simmer for 7 minutes (stir occasionally)

3. Once grits soak up broth, add cream cheese, shredded cheese, and salt and pepper to taste

4. Stir mixture well, cover and remove from heat

5. Place shrimp in mixing bowl and add creole seasoning, Italian seasoning, garlic powder, and chili seasoning then mix until shrimp is coated

6. Heat olive oil in a large pan over medium/high heat, add shrimp and cook 2-3 minutes on each side or until shrimp is pink and tender

7. Place a hefty serving of grits in a bowl and top with shrimp (and optional green onions and bacon)
